Meet Registered Dietitian Ruth Sullivan

Whether navigating food allergies or seeking general nutrition guidance, Hartwick College students now have a new resource on campus.

Registered dietitian Ruth Sullivan began visiting the College in the fall of 2023, offering in-person and virtual support to help students navigate their dietary needs.

“My job is to help students who need dietary modifications due to food allergies, celiac disease or any other medical diagnoses,” Sullivan said. “I also work with students who want to eat healthier or have other nutrition concerns and collaborate with the Hartwick team to create food and an environment where students can thrive.”

Among those she works with is Food Service Director John Tompkins. “Ruth has proven to be a huge asset to our dining program at Hartwick College,” Tompkins said. “We see more and more students each year with dietary restrictions. Ruth’s knowledge and support assist us greatly with helping these students navigate our menus and offerings.”

Sullivan’s next trip to Oyaron Hill is Tuesday, April 8. Students can meet with her during office hours from 9:30 to 11:15 a.m. in the Chesebro Room. At lunchtime, Sullivan will be at a create-your-own poke bowl station inside the Commons (regular admission required), sharing insights on the dish’s nutritional benefits. Sullivan is also available to students through virtual appointments as needed.

Sullivan earned an undergraduate degree in nutrition from Syracuse University and a master’s in health education from SUNY Cortland. Before joining the Aramark team in June 2023, she was the assistant director of nutrition management at Syracuse University. Sullivan has also served as an adjunct professor at Syracuse University and Onondaga Community College.
